We are all aware that Lebanese cuisine boasts a rich tapestry of flavours rooted in ancient traditions dating back thousands of years. Influenced by various civilizations that have occupied the region, including Phoenicians, Romans, and Ottomans, Lebanese cuisine is a culinary mosaic of Mediterranean, Arabic, and European influences.
Yes! You are absolutely correct when you say… From aromatic herbs and spices to fresh vegetables, grains, and succulent meats, Lebanese dishes celebrate the bounty of the land and sea.
And who isn’t aware of signature dishes like Tabbouleh, Hummus, Falafel, and Kibbeh that showcase the expertise of Lebanese chefs in blending simple ingredients to create complex and unforgettable flavours?
With its emphasis on freshness, balance, and hospitality, Lebanese cuisine continues to captivate and delight palates around the world, serving as a testament to the enduring legacy of its ancient origins.

I had the opportunity to embark on a gastronomic odyssey through the intricate tapestry of culinary heritage as Chef Kareem’s epic unfolded amidst the venerable annals of a familial culinary dynasty, rich with time-honoured savoir-faire.
With roots firmly planted in the soil of tradition and simplicity, Chef Kareem's culinary credo shunned fleeting fads in favour of an unwavering dedication to the authentic flavours of Lebanese gastronomy, unsullied by the trappings of contemporary indulgence.
I stepped into the vibrant tapestry of Zeta at Hyatt Regency Pune, where a veritable haven of epicurean pleasures beckoned. Here, Chef Abdul Kareem, a maestro of flavours hailing from the esteemed Syrah outlet at Hyatt Regency Delhi, meticulously curated Lebanese masterpieces that titillated the palate and transported discerning diners to the sun-drenched shores of the Mediterranean.

My culinary journey commenced with a symphony of Signature Dishes, each a masterpiece in its own right, meticulously crafted by the skilled hands of Chef Kareem.
The Tabbouleh, with its vibrant medley of parsley, mint, tomatoes, and bulgur wheat, bursting with freshness, showcased the chef's mastery of balance. Next, was the Hummus, velvety smooth and creamy, beckoned with its indulgent texture and subtle undertones of Tahini and Lemon, a homage to the rich culinary traditions of the Levant. The Falafel, golden and crisp outside, yet tender and flavourful inside, showcased Chef Kareem's finesse with chickpeas and spices, a sensory delight. And lastly, the Kibbeh, a blend of meat, bulgur wheat, and spices, shaped into delicate patties and fried to perfection, honoured ancestral kitchens and Chef Kareem's culinary heritage.
And then I indulged in the Djaj Barley Soup, a tantalizing fusion of Middle Eastern and Mediterranean flavours, boasting a luscious broth of slow-cooked chicken infused with aromatic cumin, turmeric, and coriander.

A standout was the Sabanekh Bel Djaj, a traditional Lebanese masterpiece marrying tender chicken with spinach, onions, garlic, and a symphony of spices like sumac and allspice, boasting a vibrant green hue and a hearty aroma.
For a sweet finale, the "Muhalabia" beckoned with its luxurious Middle Eastern charm, renowned for its creamy texture and delicate flavours, often kissed with aromatic hints of rose water, orange blossom water, or cardamom.

Well! As a diner, do indulge in a magnificently curated set menu, offering an array of culinary rich options that promise to tantalize your taste buds with mind-blowing delicacies. While Lebanese cuisine traditionally eschews alcohol and wine pairings, allow me to recommend Syrah, a luxurious red wine crafted from dark-skinned grapes, renowned for its full-bodied character accented with notes of pepper and a subtle hint of smokiness.
I am deeply indebted to Executive Chef Gopi and Mr. Varun, Director of Restaurants, for their gracious invitation to partake exclusively rich epicurean spectacle, showcasing a myriad of opulent signature dishes meticulously crafted by the esteemed Chef Abdul Kareem and his illustrious culinary ensemble, including the venerable Chef Avinash, Ashish, Adarsh, Priyanshu and Deepak.
And I must extend my sincerest thanks to the well-informed expert Dining Room Team. Under kind expert supervision of Sadan, Imli, Puii, Devjit, Chabom and Chipen exhibited professionalism, attentiveness, and a genuine passion for hospitality, creating a welcoming and enjoyable dining experience. Undoubtedly, their expertise enhanced the overall ambiance of the restaurant and fosters trust and loyalty among esteemed diners.
