Mediterranean Cuisine undoubtedly holds a very special place in International Fare. To begin with it is known for being one of the healthiest diets in the world especially when it emphasise the use of fresh, seasonal, and locally sourced ingredients. The cuisine ensures vibrant flavors that spans a wide range and nutritional value. And that Olive Oil! It is a cornerstone of the Mediterranean diet that employs a wide range of herbs and spices, such as oregano, thyme, basil, and rosemary adding depth and complexity to the flavours.

The Zeta Mediterranean 5 Course Set Menu vegetarian and non-vegetarian, offering sufficient choices was very well curated, paired with world famous wines along with known Indian Produces.
What I tried included, Minestrone and Bisque De Fruits of Mer (Soups), Falafel and Kotopuolo Souvlaki (Appetisers), in main course (1) Provençale Ratatouille and L’ham Couscous, and in main course (2) Pimiento Relleno De Porcini and Filetto Di Salmone Al Forno in Croatia Di Pistacch, Pastitsio and Kuzu Moussaka under (Baked Dish) category and in Desserts Cream Filled Choux and Chocolate Casata.
Each and every item was immense in taste and enormous in flavour. To me however, the show stealer was Alex’s own recipe… Baked Salmon in Pistachio Crust.

The dish combined the rich, flaky texture of salmon with the crunchy, nutty goodness of pistachios. The pistachio crust not only added a unique crunch but also imparted a subtly sweet and earthy undertone to the salmon. This pairing created a harmonious contrast that elevated the overall taste experience. This dish was not only visually appealing with its golden crust but also presented a satisfying symphony of flavors that leave a lasting impression on the palate. I thank Executive Chef Gopi who had strongly recommended this specific item. Undoubtedly, Chef Alexandre Kerbouz’s mastery of Mediterranean cuisine was truly extraordinary, and each dish was a culinary journey in itself. The flavors, the presentation, and the attention to detail were nothing short of exceptional. I sincerely thank him for sharing his profound passion and talent with us in Pune. Also being grateful to Alex’s associate Chef Henzil Saldaha. I also extend my sincere gratitude to Gopi, the Executive Chef for organising this exclusive Festival very well supported by his Expert Team of Chefs including Chef Ashish, Jasen, Atul and Dipak.

And I also take an opportunity to thank Mr. Varun Ganda (Director, Restaurants), the entire F&B Service Brigade under Avinash Yadav (AOM), and Sadan Sharma (OTL), Nikhil, Devajit and Malay at the Bar for their attention to detail, warm hospitality, and genuine care for the guests that truly set a standard of excellence. All of them collectively and individually created such a wonderful atmosphere every moment was so very enjoyable. They all took great pride in their work, and as always it truly shined through.

Yes! The Mediterranean Medley @ Zeta (Hyatt Regency, Pune) was very well celebrated for its delicious flavors, health benefits, and the cultural significance. It was undoubtedly an unforgettable dining experience.
